Sunday Supper {Beef & Guinness Stew}

Although summer was pretty much non-existent here in Dublin, we definitely feel autumn settling in quickly.  The mornings are getting colder and the days shorter. Scarfs and gloves are becoming a necessary and like any day in Ireland, an umbrella is always at arms reach. Sunday, Brian decided to make Irish Beef and Guinness Stew, with soda bread.  It was delicious and a perfect way to warm up on a chilly evening.  Today the forecast was a high of 49°F, so leftovers were welcomed tonight. Quick Pickled Veggies

I had a week off work between the holidays, so I decided to try and pickle some veggies.  Brian has been obsessed with picked veggies ever since we went to Argentina where all cheese plates were huge and filled with every type of veggie, pickled. I went to the Farmer's Market in search of in season veggies to pickle and came home with cauliflower, green beans, radishes, carrots and ginger.  Then I did some research for Quick Pickle recipes.  Since I had all day, I decided to try a different recipe for each veggie.
