Seattle {Lauren & Ryan's Wedding}

I can't believe it's been 2 weeks since Brian and I arrived in Seattle for my best friend Lauren's wedding!  The Bride and her maids. It was a great weekend, filled with spending as much time as possible with 2 of my best childhood friends, my parents and of course, Brian.  The wedding was fabulous and I couldn't be happier for Lauren and Ryan to finally be able to call themselves Newlyweds. We arrived in Seattle exhausted after a trip so long I don't even want to calculate the hours it took.  Jet-lag hit us pretty hard for the first several days. We were up, showered, caffeinated and out the door on our first day by 6am.  Which gave us some time to wander around Seattle, swoon over the fresh produce, flowers and seafood at the Pike Place Market, and stroll through some stores that we really miss over here in Europe - you know, Target, Sur La Table, Nordstrom. "Put An Egg On It" Salad

I am generally a fan of topping most things with an egg: pizza, burgers, and salads to name a few.  After coming back from Seattle with a pound of chanterelle mushrooms, we used half for our scallop dinner and I needed to find a use for the other half.  I enjoyed the arugula salad that I made earlier in the month so much that I decided to make it again.  This time with the Seattle mushrooms and topped with a couple of poached eggs to make a meal out of it. For the salad you will need: 3 cups arugula 1 shallot, chopped 1/2 lb mushrooms, sliced 1 garlic clove, minced 1 tablespoon dijon 1 tablespoon vinegar (I used balsamic) 1 tablespoon white wine 2 tablespoons olive oil 1/2 cup croutons 2 eggs Preheat the oven to make the croutons if you are making the homemade kind , it only takes about 20 minutes. Halloween Weekend in Seattle

We took a quick break from the Lederman Kitchen for an impromptu weekend up in Seattle.  Of course it was cold, cloudy, and sometimes rainy, but we still had a blast.   After meeting the wife at the Space Needle (she had a work event there), we grabbed a late bite at Serious Pie .  Seriously, it's amazing pizza.  We got a couple of pints and a mushroom and truffle pie.  I keep forgetting that we are making a food blog though and am forgetting to take pictures...  The next day we cruised down to Pike's Place Market .  It's really an interesting mix between a very touristy area, and a great local market.  It really reminded me of some of the markets we saw in France, and of course the Ferry Building in San Francisco as well.   There was a great selection of local produce, flowers, artisanal meets and cheeses, and plenty of seafood. Scallops, Rissotto, Green Beans and Seattle Mushrooms

The Wife and I both love mushrooms and I couldn't resist bringing some delicious white chanterelles back from the farmer's market in Seattle.  Typically, they will run about $20-$29 per pound here in San Francisco.  I was shocked to find them for $8 a pound in Seattle.  I just wish that we bought more... Aside from mushrooms, the Wife loves scallops and mussels (we'll be cooking mussels soon).  When we got back from our weekend away we had one night together before the Wife had to leave for another work trip.  I decided to make one of her favorites, seared scallops with sauteed mushrooms, risotto, and green beans (I was going to make asparagus but it was $9 a pound!).   For tonights dinner  for two you will need: 1/2 lb of mushrooms (any kind you like) 1/2 lb of green beans 1/2 lb of scallops (or more if you're super hungry) 4 cloves of garlic 1/3 cup arborio rice 4 cups stock (I used chicken) 1 tablespoon lemon juice ...
