Nate's Cheese Pizza and a Big Kid's BBQ Chicken Pizza

This might be the best pizza I have ever made.  Period.  It certainly was the most fun I've had cooking in a while.  Our nephew Nate was over and decided to help me out.  We decided to make a BBQ Chicken Pizza for the adults and Nate made his own personal cheese pizza.  We all enjoyed a nice homemade cesar salad to round out the meal. Believe it or not, Nate was cleaner than his Uncle Brian... To make the most excellent BBQ Chicken Pizza ever, you need the most excellent roasted chicken.  There's no magic here. Rinse the chicken and pat it dry with a paper towel.  Then season well with salt and pepper.  You can stuff the chicken with lemon and garlic (or anything else if you want).  I like to truss the chicken to ensure that it cooks evenly.  Place in a 400 degree oven for about an hour or until golden brown on the top and 170 degrees on the inside.  Make sure to let the chicken rest for at least 15 minutes before ...

Vanilla Ice Cream with Mixed Berry Compote

This has to be one of the easiest desserts that I have ever made.  Even better, it looks and tastes delicious and comes together in 5 minutes. All that you need is: 1 bag of thawed mixed berries (or fresh mixed berries if they are in season) 1 tablespoon of brown sugar vanilla ice cream almond slivers for garnish To make the berry compote, just pour the berries in a pot over medium-high heat and add the brown sugar.  Then cook the berries down for about 5 minutes until a nice syrup forms. Spoon some ice cream into a bowl And top with the berries.  Garnish with some almond slivers.  Super simply and delicious.

Spaghetti with Turkey Meatballs

Who doesn't like spaghetti and meatballs?  What can be a good dish is made great with homemade spaghetti, sauce, and meatballs.   This recipe was plenty of food for a delicious dinner for 4, plus at least 2 lunches. For the sauce: 1/4 cup of olive oil 4 cloves of garlic 2 shallots 2 tablespoons tomato paste 2 28 ounce cans of whole plum tomatos 2 cups of fresh chopped basil For the pasta: 4 large eggs 1 tbs water 3 1/2 cups sifted all-purpose flour 1/2 tsp salt For the meatballs: 3/4 cup day old country bread 1/3 cup of milk 3/4 lb ground turkey 1/4 lb chicken sausage 1 onion, chopped 3 tablespoons parsley, chopped 1 tablespoon dried thyme 1 egg 1 cup parmesan cheese First things first, get working on the sauce.  To start, just chop of up garlic, basil, and shallot. Vietnamese Chicken Salad

My favorite new  cook book  has to be the Williams-Sonoma Weeknight Cook, courtesy of our friends Jon and Jessica.  This Vietnamese Chicken Salad was so good, we made it twice in as many weeks.   For a fast and delicious weeknight meal, you will need: 1 lime 6 tablespoons of peanut oil 2 tablespoons of asian fish sauce 1 tablespoon of sugar 2 cups of cooked shredded chicken 2 cups of napa cabbage 4 bunches (about) of green onions 1/4 cup of chopped cilantro 1/4 cup of roasted peanuts 8 oz of vermicelli noodles You can definitely buy a rotisserie chicken, or use leftover roast chicken .  I just decided to buy a chicken breast and roast it.  If you go that route, just turn the oven to 400 degrees, place the chicken on an oiled baking sheet and season with salt and pepper.  Then roast for 20 minutes or until internal temperature reaches 170.
