Breakfast Frittata

I love making breakfast on the weekends for Michelle and I.  Typically I make a simple scramble with mushrooms and onions with a side of home fries.  This is basically the same thing except all mixed together in a frittata.   The thing that I love about eggs is that you can add anything to them.  These are just some of our favorite ingredients that we almost always have on hand, but you can add whatever you want once you know the technique.   For a tasty breakfast you will need: 1 medium potato (I actually used 2 small red potatoes) 1/2 red onion 8 ounces of crimini mushrooms 4 cups of baby spinach 1/2 cup shredded cheese (I used white cheddar) 4 eggs a drop of milk salt and pepper Preheat the oven to 400 degrees before you forget.  I decided to use a mandolin to slice the potatoes thin, but it's not necessary.  You can chop the potatoes along with the mushrooms and onions if you don't have a mandolin. Sunday Brunch: Scramble and Home Fries

I love brunch, it's definitely my favorite meal.  While there are dozens of amazing brunch spots in San Francisco, my favorite spot to enjoy brunch is on the couch with the Wife.  One of my favorite brunch dishes is a simple scramble.  The beauty of this dish is that you can add whatever you have in the fridge that sounds good.  When you pair a scramble with crispy potatoes and toast it's tough to go wrong. For a delicious Sunday brunch for two, you will need: 2 fingerling potatoes 4 eggs 1 tablespoon of milk 1/3 cup shredded cheese (I had some white cheddar on hand, but use whatever you have) Veggies (I used 1/2 an onion and a handful of mushrooms, again use whatever you have) 1 tablespoon of butter 1 teaspoon Herbs d'Provence Salt and Pepper Olive Oil A few pieces of toast The potatoes take about 30 minutes, so grab a cup of coffee, and watch the news while you wait for them to reach perfection.  Give the potatoes a chop...

Egg in the Hole Breakfast

I am pretty sure that there is a technical term for "egg in a hole" but I'm not sure what it is.  Whatever you call it, it's super simple and really tasty.  The premise is easy enough, take a piece of bread, cut a hole in it, and cook an egg in it.  They're all good things, so how can you go wrong? For a quick breakfast for two, you will need: 2 eggs 2 pieces of bread (I used leftover Acme Italian Batard from my marrow ) A little bit of butter Salt and Pepper Just like it sounds, cut a hole in the bread about the same size as an average egg yolk.  Butter both sides of the bread. This is a great recipe for a cast iron skillet, use it if you have it.  Toast one side of the bread on medium heat. Flip the bread once browned on one side. "Put An Egg On It" Salad

I am generally a fan of topping most things with an egg: pizza, burgers, and salads to name a few.  After coming back from Seattle with a pound of chanterelle mushrooms, we used half for our scallop dinner and I needed to find a use for the other half.  I enjoyed the arugula salad that I made earlier in the month so much that I decided to make it again.  This time with the Seattle mushrooms and topped with a couple of poached eggs to make a meal out of it. For the salad you will need: 3 cups arugula 1 shallot, chopped 1/2 lb mushrooms, sliced 1 garlic clove, minced 1 tablespoon dijon 1 tablespoon vinegar (I used balsamic) 1 tablespoon white wine 2 tablespoons olive oil 1/2 cup croutons 2 eggs Preheat the oven to make the croutons if you are making the homemade kind , it only takes about 20 minutes. Potato and Onion Frittata

I'm a big fan of weekend breakfasts.  After 5 straight days of eating yogurt or cereal in my cubicle, I am always ready for a nice breakfast at home.  We usually do our main grocery shopping on the weekends, so breakfast is always a great opportunity to use up whatever is leftover from the week.  This morning I found myself with leftover potatoes from the baked chicken , onions from the pizza , and green onions from the Dan Dan Noodles .  There's no better way to use up ingredients than in some type of egg dish. Today I departed from the typical scramble and whipped up a quick frittata.   You can add anything you want to a frittata, it's just the simple technique that you need to know in order to make sure that it cooks properly.  For our breakfast I used: 4 eggs 1 tablespoon milk 3 fingerling potatoes 1/2 of a white onion 2 sprigs green onion 2 tablespoons of cheese (we had leftover Amsterdam Reserve Gouda, the best cheese ever) Salt...
