Pulled Pork Sandos with Homemade Chips and Coleslaw (with homemade mayo!)

Image
If you are making pulled pork, invite some friends over.  It's impossible not to make a lot.  Michelle has been asking me to try my hand at this for a while, so I finally decided to give it a shot.  It's definitely not an everyday meal but is perfect for Sunday night and a group of friends.   I paired our pulled pork sandos with creamy coleslaw, baked beans, and homemade potato chips.  Crazy delicious... I read a few recipes that called for a 5-7 lb pork roast (shoulder or Boston butt).  Mine was only 2.5 lbs and we had dinner for 4 and a ridiculous amount of leftovers.   You'll need a few hours to roast this bad boy and: 1 pork roast (again, mine was 2.5 lbs but you can go bigger if you have a big crowd) 3 tablespoons of paprika 1 tablespoon of garlic powder 1 tablespoon of brown sugar 1 tablespoon of dry mustard 2 tablespoons of kosher salt Hamburger buns For the coleslaw: 1/2 cup mayo 1/4 cup sour ...

Mixed Sandos and Tomato Salad

Image
We are a few weeks behind on the blog, actually about a month behind...  Last month my in-laws were staying with us and I had to whip up a quick lunch for everyone.  I decided to make a few finger sandwiches to try and please the crowd.  I paired the sandwiches with a light tomato salad to round out the meal. We had 3 sandwiches on the menu. Toasted pesto, prosciutto, and mozzarella on Italian batard  Turkey, dijon, swiss cheese, and arugula on Italian batard Roast beef with white cheddar, caramelized onions and horseradish on a pressed sweet baguette My tomato salad is basically a crapese salad, but chopped in a more rustic style instead of sliced and stacked like a traditional Insalata Crapese.  I usually only make the classic version in the summer months when heirloom tomatoes are available.   For a great salad for lunch or dinner, just chop up a couple of tomatoes.  Use whatever variety looks good at the time. ...

Grilled Cheese Sandwich and Tomato Soup

Image
There are few things better on a rainy day than tomato soup and a grilled cheese sandwich.  It's a comfort food staple and the original soup and sando combo.  The Wife and I where doing chores around the house while it rained outside, exactly the type of day this lunch pairs well with. While I am definitely a fan of the traditional Campbell's Tomato Soup, why buy the can when you can make a great soup from scratch with fresh ingredients in hardly any time at all? For a delicious weekend lunch for two, you will need: 12 Roma Tomatoes 1 cup of basil (chopped) 4 cloves of garlic (chopped) 1/4 cup of olive oil 3 shallots (halved) 1 cup dry white wine 1 cup of water (or stock if you have it) a sprinkle of parmesan cheese for garnish salt and pepper 4 slices of good bread  a few slices of cheese for the sandwiches a little butter Preheat the oven to 400 degrees.  Prep the veggies by slicing the tomatoes and shallots in half, and cho...

Always Satisfying: Grilled Cheese Sandwich and Soup

Image
No matter how much "fancy" or "complicated" food we make and eat, there are always the comfort foods that really hit the spot.  I don't think that there is a more classic combination than a soup and sando combo.      Grilled cheese is always good, but when it's made with Acme bread and aged white cheddar it's even better.   There's nothing complicated going on here, two pieces of buttered bread, a couple slices of cheese and a pan on low heat.  The only key to grilled cheese is not getting impatient and turning the heat too high.  Take your time and wait for a golden brown outside and melted inside.  A bowl of my leftover chicken noodle soup was the perfect compliment to the grilled cheese.
