St. Patricks Day in Dublin {with Andy & Becky}

Image
To say the least, I was really excited for St. Patricks Day in Ireland.  Not only did we get to celebrate in Dublin, we got to celebrate with good friends from here and from California! We'll get to the rest of the weekend with Andy and Becky, but first the 17th of March.  We started the day off at home, getting ready with some homemade Irish coffee before venturing out. 50 Shade of Green going on - Becky & Andy brought the fun ears - thanks! I was so excited about my food craft - an Irish Flag   Crudités  plate It was a cold day (it snowed in the morning!), so the goal was to find a pub on the parade route that had a window upstairs with open seats for 6 of us.  As you can imagine, this would be a popular scenario for many on this cold day, so we headed to town early.  Turns out, we got there a little too early, as it was a Sunday and the Pubs can't open until noon - fail.  We retreated to a cafe for another Irish coffee while we wait...

Breakfast Frittata

I love making breakfast on the weekends for Michelle and I.  Typically I make a simple scramble with mushrooms and onions with a side of home fries.  This is basically the same thing except all mixed together in a frittata.   The thing that I love about eggs is that you can add anything to them.  These are just some of our favorite ingredients that we almost always have on hand, but you can add whatever you want once you know the technique.   For a tasty breakfast you will need: 1 medium potato (I actually used 2 small red potatoes) 1/2 red onion 8 ounces of crimini mushrooms 4 cups of baby spinach 1/2 cup shredded cheese (I used white cheddar) 4 eggs a drop of milk salt and pepper Preheat the oven to 400 degrees before you forget.  I decided to use a mandolin to slice the potatoes thin, but it's not necessary.  You can chop the potatoes along with the mushrooms and onions if you don't have a mandolin. This ...

Sunday Brunch: Scramble and Home Fries

Image
I love brunch, it's definitely my favorite meal.  While there are dozens of amazing brunch spots in San Francisco, my favorite spot to enjoy brunch is on the couch with the Wife.  One of my favorite brunch dishes is a simple scramble.  The beauty of this dish is that you can add whatever you have in the fridge that sounds good.  When you pair a scramble with crispy potatoes and toast it's tough to go wrong. For a delicious Sunday brunch for two, you will need: 2 fingerling potatoes 4 eggs 1 tablespoon of milk 1/3 cup shredded cheese (I had some white cheddar on hand, but use whatever you have) Veggies (I used 1/2 an onion and a handful of mushrooms, again use whatever you have) 1 tablespoon of butter 1 teaspoon Herbs d'Provence Salt and Pepper Olive Oil A few pieces of toast The potatoes take about 30 minutes, so grab a cup of coffee, and watch the news while you wait for them to reach perfection.  Give the potatoes a chop...
