Pumpkin Pie
Pumpkin pie is a holiday classic, and my favorite treat for Thanksgiving. When pumpkin starts showing up on menus and in coffee, it's a true sign of Fall. I love most anything pumpkin.
Mom used the other half of the pie dough from the Chocolate Silk Pie for the pumpkin pie crust, and then the extra to make leave cookies for the edges.
How beautiful is that!
Pumpkin pie filling (for a 9" pie):
2 eggs
1 can pumpkin (we use 2 cups homemade pumpkin puree)
3/4 cups sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1 2/3 cups evaporated milk (we use the Fat Free version)
Pumpkin pie is actually a pretty easy pie. You can easily buy a pie crust at the store and then you only have to make the filling.
Mom pureed the pumpkin back up in Oregon and brought it down. To do this, she gut a pumpkin, steamed it until it was soft and a fork easily goes in. Then she put it in a food processor and pureed it. Last, she put it through her food mill (I use a mesh colander since I don't have a food mill) to separate the skin out.
Mom also brought down all the dry ingredients measured out and ready to go.
First, heat the oven to 425 degrees.
Then, slightly beat the egg,
Then add all the other ingredients and mix together!
Mom lined the pie crust with Aluminum so it doesn't get too brown. I poured in the filling.
And then mom carefully transfered it to the oven.
With some of the extra pie dough, we also cut out some leave cookies and sprinkled with cinnamon to use to decorate the top. We kept them in the oven for about 7 minutes, then removed
Cook the pie for 15 minutes, then turn the oven down to 350 degrees and cook for another 45 minutes.
With about 15 minutes left on the timer, you can remove the aluminum from the crust to brown it.
The pie will be done when you can stick a knife or toothpick in and it come out pretty clean.
Serve with some homemade whipped cream
