That's me. Lucky to have my husband.
Brian left Monday for a 2-night work trip, so Sunday night he cooked a feast so I would have leftovers while he was gone.
He made Roasted Chicken, Fennel and Potatoes with Arugula Salad, which included roasting a whole chicken and then, after dinner, he made stock.
I had leftovers for Monday lunch and dinner, made a chicken sandwich for lunch today, then used the stock and chicken to make chicken noodle soup tonight. I'll have plenty of soup for lunch tomorrow too.
I'm the first to admit I'm spoiled, and I like it.
Now, I'm looking for a recipe with Leeks to make for HIM when he gets home tomorrow evening. I owe him something good. Any suggestions?
